I LOVE spinach dip. But really, who does not?
The ooey-gooey dip is so delicious that it provides about that I will never, ever be ready for swimsuit season. I agree with this, however, because he is just that good - and something tells me that I am not alone

Ingredients:
- 1 tablespoon of olive oil
- 5 ounces of baby spinach
- salt and pepper
- 8 ounces cream cheese
- 1 cup mozzarella grated cheese
- 1 tablespoon garlic powder
- boneless 4 chicken breasts
- 1 cup all purpose flour
- 3 large eggs
- 2 cups panko bread crumbs
- ? cup of oil for frying
Directions:
- Add the oil in a saucepan for cooking and light the fire.
- Pour spinach into the heated pan, add salt and pepper, and toss to coat spinach in olive oil.
- When the spinach is wilted, scoop into a bowl. Add the cream cheese, mozzarella, and garlic powder. Mix well, then set the bowl aside.
- Take the chicken breast and cut it in half, then cut a hole in the top of each half and stuff the spinach mixture inside. Pinch the ends closed.
- Roll each half in a flour bowl and a bowl in beaten egg, and finally in a breadcrumbs bowl.
- Add more oil to the pan and turn up the heat, then add the stuffed chicken. Cook on both sides until browned.
- Dig in!
