(And if there is a ton of Fondant involved, you're pretty much the right sugar consumption.)
But if you could have a cake that was made from fresh ingredients and was yet quite beautiful? Well, you can. These vegan cakes are created by Stephen McCarty, who founded Sukhavati Raw Desserts. "Sukhavati" means "happy" in Hindi, and see why this makes sense when you take a look at these cakes.
Fruit, fruit and vegetable purees and other natural foods help the baker to create bright, cosmic designs. Nothing artificial here!

The symbols XX violet were created to celebrate its 20th anniversary of being a vegan.
And it is not limited to cakes. This is a bowl with a smoothie similar Mandala pattern on top.

Your first thought might be, "No way, those who are too pretty to eat!" But it is good, really! McCarty wants them to be eaten. For him, these cakes are a perfect representation of the Buddhist philosophy. The concept of impermanence dictates that all things must change shape at some point.
This compares to Tibetan sand mandalas of which are large, colorful, and labor ... and they are destroyed at the end. Each cake, with its colors, symmetrical designs, is created to be eaten.
